Mix it up muffins
Muffins freeze well and defrost quickly, so are ideal lunch box food. Use this basic recipe and add spices, fruit/nuts, over-ripe bananas or chocolate to bake whatever flavour you like.
How to make
Preheat the oven to 200°C.
Grease muffin pans or pop in paper muffin cups (spray with non-stick spray first or they will be hard to peel off).
In a large bowl, combine the flour, baking powder, and sugar, plus any other dry ingredients, such as spice, sultanas or chocolate chips.
Combine the butter, milk and egg. Whisk with a fork to combine. If including mashed banana or vanilla, juices or yoghurt, add them now.
Note: Keep track of how much extra liquid you use and take that quantity from the amount of milk. For example, if you’re adding ½ a cup of passionfruit yoghurt, you’ll only need ½ a cup of milk.
Gently fold the liquids into the dry ingredients till just mixed. Do not beat. Quickly spoon the mixture into prepared pan and place in the oven.
Bake for 10-15 minutes or until well risen, golden and springy.
